Chocolatier Sculptor of Sweets Rendering Personal Hero Dana White

(New York, NY) Hakan Martensson – a mild-mannered executive pastry chef and master in the art of chocolateering, recently settled into Fika NYC’s flagship location, a Swedish Espresso bar serving Swedish inspired breakfasts and lunches alongside home-baked pastries and their famous chocolates at 66 Pearl Street near Broad Street in Lower Manhattan.

Born and raised in the heart of the Swedish south, Håkan knew from an early age that he would devote much of himself to tickling people’s taste buds with the wonderful world of chocolate. What he didn’t know is that he’d soon be tickling people’s funny bone too with some of his audacious creations, including Lladro-like figurines, Japanese anime characters and now UFC president and promoter Dana White, who is in town this week.

In celebration of “fight week” in Manhattan, anticipating this weekend’s UFC event featuring a welterweight title fight between Georges St-Pierre vs. Dan Hardy and an interim heavyweight title matchup between UFC veteran Frank Mir and arriving star Shane Carwin, an idea was sprung on Hakan by his boss Lars Arkerlund.

“He challenged me this week to take a large block of white chocolate and make a bust of, who else, Dana White,” said Hakan. “I hope to meet him someday, but I feel like I know him pretty well already from the photos it took to make this.”

Blessed with a very vivid imagination Hakan tries his hand sculpting just about any subject matter in his favorite medium. Håkan often draws inspiration from the world of fairy tales, fantasy and magical stories and his elaborate and unique chocolate sculptures were awarded with a gold medal at the 2008 Culinary Olympics. In an exclusive collaboration with FIKA espresso bar, Martensson has developed an assortment of hand rolled truffles, pralines and chocolate bars and on occasion, fight promoters. It brings new meaning to the true “tongue-in-cheek” enjoyment of chocolate. The bust will be on view all week at Fika NYC.
